Enormous Cinnamon Rolls with Creamy Frosting
1 box Pillsbury Hot Roll Mix prepared to stage 5 or frozen bread dough thawed
1cup melted butter
1 cup sugar
2 tablespoons cinnamon
1 cup chopped pecans plus more for garnish (optional)
For Frosting
4 ounces Cream cheese
2 tablespoons butter
1 teaspoon vanilla
2 cups powdered sugar
Turn dough out onto a floured surface, Roll the dough to a large rectangle about 6 inches wide and 30 inches long. Brush rectangle with melted butter. Mix sugar and cinnamon in a bowl and sprinkle cinnamon sugar and pecans onto dough. Roll dough into one large cinnamon roll. Start by rolling the short end up. You will end with one fat roll that is about 6 inches wide. Cut this large roll in half. Place each roll into a stainless steel bowl or brioche pan, cover with dishtowel and let it rise for 40 minutes. Preheat your oven to 350 degrees. Bake for 25-30 minutes or until golden brown. Prepare frosting by combining butter, cream cheese and vanilla in a bowl with a hand mixer. Slowly add sugar. Remove roll from pan and frost immediately. Slice and serve.
